Corn Meal Pancake / Muffin Mix - Milled whole kernel corn flour, naturally sweet.

Ingredients:     
Whole grain yellow corn flour, Unbleached wheat flour, Bleached enriched wheat flour, Aluminum free baking powder (calcium phosphate, baking soda, corn starch), salt.

Preparation:

Pancake & Waffle Preparation:

Preheat griddle to point where a water drop will dance! (about 400°F) light buttering will reduce sticking and improve color.

In a mixing bowl combine 1 ½ cups Northern Lites Pancake Mix with 1 ½ to 2 cups milk. Add 1 or 2 eggs and 1 tbs vegetable oil or melted butter Do not over-beat!

Optional: Add 2 tablespoons sugar (added sweetness) and 1 tbs lemon juice(sours milk for lightness) Pan fry ¼ cup portions of batter turning when air bubbles break.. cake will be golden brown.

Serves 4 to 5.

Muffin Preparation:

Preheat oven to 425°F. Grease or paper line 12 muffin cups.

In a large bowl combine 2 cups Mix 1/3 cup sugar with 1 ½ cups milk, 1 egg beaten, and 1/3 cup vegetable oil. Mix until ingredients are moistened (do not over-beat) Fill muffin cups 2/3 full.

Bake 17-20 minutes.

Try topping with grated nuts, berries or honey, before baking.
