Ginger Snap Pancake Mix - The "snappy" flavor of ginger in our whole wheat pancake.

Whole Wheat Flour, Unbleached Wheat Flour, Bleached/Enriched Wheat Flour, Aluminum Free Baking Powder (calcium phosphate, baking soda, corn starch), Natural Ginger Flavor, Natural Vanilla and Artificial Flavors with Maltodextrin, Natural Tocopherols, Salt and Tricalcium Phosphate (to prevent caking).
Pancake & Waffle Preparation:
Preheat griddle to point where a water drop will dance! (about 400°F) light buttering will reduce sticking and improve color.
In a mixing bowl combine 1 ½ cups Northern Lites Pancake Mix with 1 ½ to 2 cups milk. Add 1 or 2 eggs and 1 tbs vegetable oil or melted butter Do not over-beat!
Optional: Add 2 tablespoons sugar (added sweetness) and 1 tbs lemon juice(sours milk for lightness) Pan fry ¼ cup portions of batter turning when air bubbles break.. cake will be golden brown.
Serves 4 to 5.
Preheat oven to 425°F. Grease or paper line 12 muffin cups.
In a large bowl combine 2 cups Mix 1/3 cup sugar with 1 ½ cups milk, 1 egg beaten, and 1/3 cup vegetable oil. Mix until ingredients are moistened (do not over-beat). Fill muffin cups 2/3 full. Bake 17-20 minutes.
Try topping with grated nuts, dried fruit or cinnamon sugar before baking.
Try adding a layer of peach (fresh or preserves with a spoon of whipped cream as a pancake topping.
Try a sprinkle of additional brown sugar, and/or nutmeg and/or allspice on your muffins as they are ready to bake. For unique touch try adding a touch of garlic salt!
