Oat Bran Buttermilk Muffin Mix - A tantalizing combination of the best from the grainery and the dairy... nutrition can be a taste treat.

Ingredients:     
Oar Bran, Bleached enriched wheat flour, Buttermilk Powder, Aluminum free baking powder (calcium phosphate, baking soda, corn starch), Salt.

Preparation:

Muffin Preparation:

Preheat oven to 425°F.

Grease or paper line 12 muffin cups. In a medium bowl combine 2 cups Oat Bran Buttermilk Muffin Mix, ½ cup sugar with 1 ¼ cups water, 1 egg beaten, and 1/3 cup vegetable oil. Mix until ingredients are moistened (do not over-beat). Fill muffin cups 2/3 full. Bake 17-20 minutes.

Variations:
Apple Treats: Add 1/8th tsp each nutmeg & cinnamon plus 1 cup diced apples or use fruit juice for water & sugar.
Berry Muffins: Add ¾ cup wild berries or raspberries to batter.

Surprise Muffins: Fill muffin cups ½ full and add 1 tsp preserves into center of each. Top with batter to 2/3 full.

Pancake & Waffle Preparation:

Preheat griddle to point where a water drop will dance! (about 400°F) light buttering will reduce sticking and improve color. In a mixing bowl combine 1 ½ cups   Muffin Mix with 1 ½ to 2 cups milk. Add 1 or 2 eggs and 1 tbs vegetable oil or melted butter. Do not over-beat!

Optional: Add 2 tablespoons sugar (added sweetness) and 1 tbs lemon juice(sours milk for lightness) Pan fry ¼ cup portions of batter turning when air bubbles break.. cake will be golden brown.
